Favorite Casseroles...

With food prices climbing higher and higher,
feeding a family on a budget is a challenge.

I have found myself making lots of casseroles lately
and thought y'all might like to share your goodness.

One of Baby Bunny's favorites is
my Chicken N Rice with Broccoli :

One pkg white rice
One pkg wild rice
diced chicken breast
cream of mushroom soup
diced broccoli florets
herbs, spices, and shire to taste
eyeball milk to desired saucy mixture

Top with fried onions and bake @ 350 til done...
 
I use the crockpot for this.

Chicken Cacciatore
4 boneless skinless chicken breasts fully cooked
1 red bell pepper
1 yellow bell pepper
1 orange bell pepper
1 green bell pepper
2 large cans of diced Italian style tomatoes
1/2 small jar calamata olives pitted and sliced
1 red onion
1/2 tablespoon of fresh oregano
2 tsp of thyme

cook on high 4 hours or low for 6
EXCELLENT.

You can put it on top of extra small penne pasta or eat it without, but super good either way!
 
Pork Chop Casserole

Lightly brown chops in pan on stovetop. Remove to casserole dish. Pour two cans tomato soup and two cans drained peas onto chops. Bake 350 for about 50 mins. Serve with mashed taters & warm bisquits
 
We had Tator Tot Casserole for supper. There are a TON of varieties on the net. It's not my favorite (I'm not much of a tator tot fan) but the kids like it, and it had been a while since I made one. Although, that's not so cheap now that ground beef is sky high!
 
Gr. beef is sky high due to ethanol being used for gas and a shortage of corn for feed. Among other things. GAH!!!
 
Mexican lasagna. Very tasty, goes a long way.

Tortilla's.
Grated cheese.
Bison - okay if you want you can use beef.
Crushed tomatoes.
Can of black beans.
Basically, mix up some chili with the tomatoes/beans/meat.

Layer tortillas in a rectangular baking dish. Then ladle on some of the chili. Then grated cheese. Repeat, with a final layer of cheddar cheese.

Bake at 350 for 30 minutes or until it is bubbling.

Server with salsa and sour cream.

You're not a fan of tater tots?!?!?!?!? I bet you dont like baseball, moms apple pie or Jesus either!!!! Terrorist!!!!!!
