Need Recipes

I am looking for recipes that can be made and frozen. My daughter is going to have a long road to recovery and will be having to travel so much to see the baby I wanted to make up some dishes to freeze for them to make life a little easier. So what do you have?

I brown a pound of ground beef and mix that with about a cup of parmesan cheese and one box of cooked penne, or any tube noodle. Then I mix in a jar of pasta sauce...I like the 4 cheese or ricotta parmesan by Preggo. Put it in a 13x9 dish, I have used those foil ones too, and top it with mozarella. You can freeze it like that and then pop it in the oven when you are ready to eat. I usually bake it at 375 for 30 min, but if it is frozen, it will probably take longer. You can also mix in some ricotta or other Italian cheese when you mix in the parmesan if you want.

I'll have to think on it and get back to you.

Is your daughter ok? How far away is bambino's NICU?

My daughter is doing ok. She is getting around very slow but over all she is doing well. The NICU is at Atlanta Medical and she lives at Rockmart so it is going to be a drive for them.

I don't have anything that I normally make and freeze. But I'll check some of the blogs I follow, some of them do. In the meantime, check Hillbilly Housewife and Pioneer Woman, I think both of them make and freeze. Oh! and there's Once a Month Mom, she does monthly cooking, so I'm sure she has some freezer recipes!

Lasagna is always a good standby for such things.

In addition to the whole food/recipe thing ... is there a need for any other help? Running errands for them ... cutting the grass ... helping with household chores?

Marine Mom, I'm out here in Yorkville, what can I do to help. I'll go ahead a make some quick meals for them to freeze, just let me know when they will need them. Yes, it's going to be quite a drive, but the way he's going he'll be home in no time. :)

Thank you all!

NG you are so sweet and I know you are always there when needed. Hubby is on spring break this week so he will be doing all her running around but she is really having such a hard time leaving this little guy.

I know how it is, fortunately my grandson was only 10 minutes away from where my daughter lived. I can't imagine that drive every day. Be sure she gets some rest, I'll go up there and sit with the baby if I have to. Don't think they'll let me do anything but I can always give regular updates.

Still praying he comes home very, very soon. :love
