I've never had this one before, but picked it because it's rated 5 stars everywhere. So, we'll see. I also picked it because I didn't have 3 days to make one of the 3-day ones. I'll let you know how it turns out. My parents love Coconut Cake too, but they've only had it but a couple of times since my grandmother passed away 6 years ago. And, she hadn't been able to cook for several years prior to that. Today is my parents' 49th wedding anniversary. So, I'm hoping this is really good.
There seems to be a million coconut cake recipes to choose from! And, rumor has it, no self-respecting Southern cook would ever put Cool Whip on a coconut cake.

I don't know how many of you remember the Rich's Bakery, but I found a recipe online that claims to be the Rich's Coconut Cake recipe. It says it's a reprint from the AJC, so it could be authentic. That Coconut Cake was awesome! My grandmother used to order those for special occasions.
And, since my husband's not a big fan of Coconut Cake, I made him a Chocolate Chess Pie (that also claims to be an original Rich's recipe). First time I made that one too, so I'll let you know how it turns out.
