...I baked a Key Lime pie tonight. Admittedly, I live in a remote part of North Dakota with a very limited grocery store. I don't have Key Limes available, and the real limes are expensive, so...I used a lime for its rind and I bought lime juice from a bottle.

This is an HDR picture, so it brings out the faults of the stove in my new house. However, this is the first stove I've ever used as a North Dakota resident that isn't older than me, so I'm pretty stoked that people will notice the food more than the stove!

Hey, that's awesome! Your idea for the rind is a great one...great way to adapt! Mmmmmmmmmm...I do love me some key lime pie. Might have to make one this week.
 
I LOVE key lime! I have a special affection for key lime cupcakes. YUMMY! Yours look great. And, I didn't notice the stove. :D I don't know if you have a Kroger or not, but our local Kroger actually sells Key Lime juice in a bottle.
 
Yum, yum........my favorite. I have a key lime tree, haven't had more than a couple limes, perhaps this year. I started them from seed. :)

It definitely needed the cool whip. I took it to church (since I don't want to add the tonnage that would result from eating an entire pie by myself). It went over pretty well there. Most had never had one.
 
Looks good. I just use key lime juice from the bottle. Easy recipe....1/2 cup key lime juice, 8oz cream cheese and a can of condensed milk, little bit of lime zest.....add to a graham craker crust. Before serving tons of whipped cream.
 
Nobody will laugh at a pie you share with them. I LOVE Key lime pie, and the key lime juice in the bottle is just fine with me. That pie looks great.

Yeah, I should think it would take an incredibly discerning cook to taste the difference unless the bottled juice was just icky somehow. You done good, squirrel!
 
Beautiful! And I used the bottled key lime juice when we lived in Florida. It's very good!
 
Funny story, Waski. (Background info) Every year for Thanksgiving (since my husband's parents have both passed away and my mother is bedridden) I make 2 full blown meals every year. At lunch time we eat with just our little family of 4. Each member picks their favorite and everything is made fresh. So, it is turkey, dressing, bread and 4-6 sides at lunch time, then we clean up and start cooking again for dinner time to take to my parents home.

The first year we created this grand adventure, I made the decision to use canned sweet potatoes for the sweet potato casserole. Unfortunately, my son saw the empty can in the garbage. He picked it up and said "oh no you didn't". We cracked up! Fortunately, he loved it anyway. :))
 
I just want to say that I have never had a key lime pie and since y'all keep saying just how good they are, I think that one of you should make me one!

You probably would not choose me since I've never made one, only purchase them. :)) That's only because of the tongue-lashing from those who have such high ideals about how they should be properly made that I've always been intimidated. :))

I've never had one either and that's the truth. I've never been a fan of the taste of lime.
